The cattle's feed, a meticulously prepared amalgamation, undergoes an arduous daily two-hour process, blending 15 varieties including meadow grass, moist barley mash from beer production by-products, maize, barley, and more – all without preservatives or antibiotics. Unlike the conventional practice of slaughtering most Wagyu at around 28 months, Mr. Ozaki champions a philosophy of patience, advocating for slaughtering between 28 to 36 months, as he believes that their flavor matures over time.
